Introduction

This recipe uses my Kicked up Seasoned Flour Recipe, also on sparks, but any flour for coating brains will work. This recipe will also work if multiplied. Ingredients

    2 Tbsp extra virgin olive oil
    4 oz Pork Brains, cleaned
    Kicked Up Seasoned Flour Recipe
    1 oz Red Wine Vinegar
    1 oz White Wine Vinegar
    2 Tbsp Franks Red Hot Sauce
    1 Tbsp ground Oregano

Directions

Warm non-stick pan over medium high heat. Add olive oil.
Dust brains in flour. Saute 2 minutes per side, or until golden and solid. Remove from pan and deglaze pan with vinegars. Add hot sauce and oregano. Drizzle pan sauce over finished brain or serve on the side.
