This was invented by my client Steph. I add salt, chilli flakes and a teaspoon of low calorie pesto which adds about 50 calories and increases the sodium content and these are not included in the nutritional info. Ingredients

1 Wholegrain Food Doctor Pitta bread
6 Cherry Tomatoes cut in half
1/2 sweet red pepper cut into slices
1 heaped teaspoon Waitrose Roasted Pepper pesto
1 teaspoon olive oil
1/2 tub Kraft Philidelphia Light Mini
Directions
Spread the cream cheese onto the pitta.
Pile on the tomatoes, then the peppers.Put the pesto on top.
Drizzle with olive oil. Sprinkle a little low salt and chilli flakes over vegetables.
Bake in oven approx 15 minutes . 180 degrees.
Ready when vegetables are softened and before the pitta looks too baked.
Serving Size: makes a COMPLETE MEAL FOR 1 for lunch or could be doubled for dinner/ a salad added
