    1 lb stew beef
    1 medium onion, halved and sliced thick
    1 tbsp olive oil
    2 potatoes, cubed
    2-3 carrots, cut into chunks (or 2 cups baby carrots)
    5 cloves garlic, chopped
    4 cups beef broth
    1/2 cup red wine
    1 large sprig rosemary
    salt and pepper


1. Heat oil in large dutch oven. Season beef with salt and pepper.
2. Brown beef on all sides, about 5 minutes.
3. Remove beef and drain on paper towel.
4. Add onions. Stir until golden and caramelized, about 15-20 minutes.
5. Add broth, red wine, beef, potatoes, carrots, and rosemary. Season with salt and pepper to taste.
6. Lower heat and let simmer about 2 hours, until beef is fork tender. Remove rosemary branch, serve.
