Number of Servings: 8

Ingredients

    1 diced onion
    1/2Tbsp EVOO.
    Cooked Chicken Breast (bite sized pieces).
    1 15 oz. can black beans (drained & rinsed)
    1 15 oz. can corn (drained)
    1 Quart (4 cups) Tomatoes
    2 small cans enchilada sauce (or 1 dry package)
    Optional:
    Cheddar Cheese
    Lite Sour Cream
    Tortilla Chips

Directions

Sautee one diced onion in 1/2Tbsp EVOO.
add precooked Chicken Breast (bite sized pieces).
Add:
1 15 oz. can black beans (drained & rinsed)
1 15 oz. can corn (drained)
1 Quart (4 cups) Tomatoes
2 small cans enchilada sauce (or 1 dry package)
Simmer until heated through.
Serve with a sprinkle of cheddar cheese, lite sour cream, and tortilla chips.

Serving Size: Makes 8 - 1.2 cup servings
