My favorite easy go-to chicken recipe. My favorite easy go-to chicken recipe.
Number of Servings: 6


    6 chicken pieces, skin-on (I use 2 breasts and 4 thighs)
    1 c white wine (I like Riesling)
    8 pats of butter
    2 T dried tarragon
    2 T dried chervil
    salt and pepper to taste


Arrange chicken pieces in a baking dish with a little space around each one. Pour over enough wine to cover the pan about 1/2" depth. Crush herbs in your palms and sprinkle over each piece of chicken. Dot each piece with a pat of butter (the breasts usually will need two). Salt and pepper lightly to taste.
Cover with foil and bake for about 30 minutes at 350F. Remove the foil and bake an additional 15 or so minutes until the skin turns brown and bubbly.
