Number of Servings: 10


    1 pound lean ground beef
    1 large onion, chopped
    2 1/2 cups salsa (your choice of heat level)
    1 can of black beans, rinsed and drained
    1/4 cup reduced fat Italian salad dressing
    2T taco seasoning
    1/4 t cumin
    6 corn tortillas (8 minutes)
    1 1/4 cupts frozen corn
    3/4 cup low-fat or non-fat plain yogurt (you can also use sour cream)
    2 Cups Mexican shredded cheese

    1 Cup Shredded Lettuce
    1 medium tomato chopped
    1/4 cup minced fresh cilantro


1. chop onion, and brown beef with onion
2. Stir in salsa and beans, corn, and salad dressing, yogurt, taco seasoning, and cumin
3. Spoon layer of meat mix on the bottomo of a 8" x 10" baking dish, sprinkle with cheese
4. cover with tortillas
5. Repeat with meat and cheese layers until meat mixture is gone.
6. cover with foil (sprayed with non-stick cooking spray) and bake @ 400 degrees F for 25 minutes. Let stand 5 minutes and top with lettuce and tomato

Serving Size: cut 10 equal pieces in a 8"x10" baking dish
