    1 T Organic Extra Virgin Olive Oil
    1 onion, finely chopped
    salt and pepper
    2 Fennel bulbs chopped
    2 cups carrot, cut into bite sized chunks
    1 pound of yukon gold fingerling potatoes (or regualr potatoes chopeed into bite sized chunks)
    1 cup chopped celery
    3 pounds of chicken, bone in, skin removed
    4 cups low-sodum chicken broth
    1 T fresh dill


1. Sautee onion in 1 T. olive oil unitl golden brown
2. chop fennel into 1/4" slices, cut carrots in to bite sized pieces, cut potatoes into bite sized pieces, and thinly slice celery.
3. In a crock pot, evenly spread carrots, potatoes, fennel, and celery.
4. Arrange chicken pieces on top, pressing into veggies, sprinkle with salt and pepper.
5. Spread hopt onion over chicken
6. Add broth, cover immediately with lid and cook on low for 6 hours.
