Ingredients

    4 cups - Shredded hash-brown potatoes
    2 cups - whipping cream
    1 1/2 cups low-fat shredded cheddar cheese
    1/4 cup - sliced green onion
    1 tsp - salt
    1/4 tsp - black pepper

Directions

Preheat oven to 350F lightly spray four 1-cup oven safe bowls with nonstick cooking spray.
Combine has-brown, cream, 1 1/4 cups cheddar, green onion, salt and pepper in mixing bowl.
Place potato mixture in oven safe bowls, and sprinkle remaining cheese over the top.
Bake until bubbly and golden brown 35-45 minutes.

Serving Size: Makes 4 1 cup bowls
