    1 onion, diced
    1 shallot, diced
    1 garlic clove, minced
    4 ears corn, corn cut off
    3 yellow bell peppers
    3green bell peppers
    1 potato, peeled and diced
    1 bay leaf
    1/2 c fresh cilantro, chopped
    5 c chicken broth
    1T olive oil
    fresh ground pepper
    1/2c cream (optional)


1. place bell peppers over flame and blacken outside and then place in paper bag to cool for 5 minutes.
2. while the peppers are cooling, dice the shallot and onion and garlic.
3. cut the corn off the cob and put in a hot pan and toss until they change to a golden color. when finished, divide into 2 2-cup portions and set aside.
4. add olive oil to a soup pot and saute shallots and onions.
5. while the onions and shallots are caramelizing , peel the skin off the peppers and dice them. when diced add them to the pot.
6. stirring occasionally, add diced potatoes to the pot and add 5c chicken broth, bay leaf, 2 T chopped cilantro, salt and fresh ground pepper.
7. simmer for an hour covered.
8. then, take a stick blender and blend until smooth. then add the remaining cilantro and corn to the pot and simmer for another 10min.
9. serve hot
