    Pink Salmon (canned), 1 can 14.75 oz
    Wheat germ Hodgson Mill, 4 tbsp (can use bread crumbs)
    Scallions, raw, 0.25 cup, chopped
    Egg Whites Eggbeaters, 3 tbsp
    Pepper, black, 0.25 tsp


Debone, skin, drain & crumble salmon. Add ingredients including 1 tsp lemon zest & mix gently. Shape into 6 salmon cakes (about 1/3 cup per cake). I grilled mine on a George Forman grill because I don't eat fried. Can be fried.Serve with red pepper relish (see my recipe on web site)
