    4 cups white bread cubed
    2 cups roasted squash chopped finely
    1 Tlbs Olive Oil
    1 1.2 cups shredded Monterey Jack cheese
    1 lb. frozen chopped spinach thawed and drained
    6 large eggs beaten
    1 1/2 cups whole milk
    salt and pepper to taste


Mix cubed bread with oil and toss into a 8" baking dish. Add Squash and then layer with cheese and spinach. Mix milk and eggs and pour over top and top with salt and pepper. Let sit 10 min while oven warms up to 400, then bake 40-45 min.
