Simple split pea soup recipe to make at home. Simple split pea soup recipe to make at home.
Number of Servings: 4

Iberia Dry Green Split Peas (12 oz bag)
Publix Sweet Sliced Carrots (1 can)
    1 Medium Onion (chopped)
    9 strips Butterball Turkey Bacon
    Pam Cooking Spray

Sort through dried beans, removing all foreign materials. Rinse peas and let them sit in water. Spray pan with Pam cooking spray and add bacon. Cook until crispy. Let bacon drain on paper towel. Set aside. Add onions to same pan with bacon drippings. Saute and set aside. Add 1/2 cup of water to pan to get all the scrapings out of it. In large pot, add the drained split peas, the liquid from the bacon pan. Add enough hot water to the peas to cover them. Start off on high heat until peas start boiling. Reduce heat to medium. Let cook for 45 minutes, stirring occasionally and adding hot water as needed. After 45 minutes, you can add your onions and carrots, plus salt and pepper. Reduce heat to low heat. Another 20 - 25 minutes and you should see your broth thickening up. Once broth is thick, your soup is now done. Remove from heat. Crumble your bacon and add it to the soup. Stir well. Let cool a little and serve with crackers or my favorite... corn muffins. Enjoy!
