    1 tbs olive oil
    1 large onion, chopped
    3 cloves garlic, minced
    3 medium carrots, chopped into bite sized pieces
    4 stalks celery, leaves set aside, chopped into 1/2 inch pieces
    6 sprigs parsley, diced
    2 tbs tomato paste
    2 bay leaves


Heat oil in a large pot. Add onion, garlic, carrots celery leaves and parsley, leaving celery pieces aside. Saute about 10 minutes, until soft, but not burned.

Mix tomato paste with 1/2 cup warm water. Add to vegetables. Continue cooking, stirring occasionally, for 15 more minutes.

Add 2 quarts water and 2 bay leaves. Bring to boil. Lower heat to simmer and simmer for 15 minutes. Check to make sure vegetables and lentils are tender.

Add chopped celery and continue cooking for 15 minutes or until celery is tender.
