Ingredients

    Sour Cream, 2 tbsp
    Chili powder, 2 tbsp
    Cumin seed, 1 tbsp
    Garlic powder, 2 tbsp
    Pepper, black, 2 tsp
    Salt, 2 dashes
    Avocados, California (Haas), 1/2 skinned and peeled (or whole if desired)
    Lemon Juice, 1 lemon yields
    Yellow Sweet Corn, Canned, 1 can (12 oz) (fresh cooked or frozen okay)
    Garlic, 4 cloves
    Iceberg Lettuce (salad), 8 leaf, medium
    Onions, raw, 1/2 small
    Green Peppers (bell peppers), 1/4 cup, chopped
    Red Ripe Tomatoes, 1-1/2 cup, chopped or sliced
    Jalapeno Peppers, 2 pepper
    Beans, black, 1-1/2 cup
    Flour Tortillas, 8 tortillas, medium (approx 6" dia)
    Cilantro, dried, 2 tbsp

Directions

1. add black beans and corn to bowl
2. dice and add to bowl with beans and corn: tomato, avocado (squeeze some lemon juice on chunks), onion, garlic, and bell pepper / jalapeņo.
3. chop fine and add to same bowl: cilantro
4. add to bowl with above mixture: black pepper, garlic powder, chili powder, salt, and cumin.
5. squeeze remaining lemon in mixture and stir all together.
6. place on lettuce leaf (enough to cover most of the tortilla) on flat tortilla then spread each leaf a thin layer of sour cream.
7. spoon mixture on top of lettuce leaf then fold tortilla in half.
8. serve

Serving Size: Makes 8 soft tacos (6" inch flour tortillas)
