    1 whole ripe Avocado
    6 Eggs
    cream of tarter (optional)
    2 scoops MRM 100% All Natural Whey Rich Vanilla Protein Powder
    2 pks truvia


Set out eggs to room temp.
Line baking dish with parch. paper and spray with pam.
Heat oven to 350

Seperate whites in one bowl and 4 of the yolks in a seperate bowl
add cream of tarter (1/8 tsp) to whites and whip till stiff (almost dry) peeks form. Set aside

Add whole avocado (minus skin and seed), truvia and mix till smooth, gradually add the two scoops of protein powder till smooth.

Fold yolk mix into whites being very careful not to over mix.

Pour mix into baking dish and cook 20-30 min. Should not jiggle in the center.

Remove from oven and from baking dish to cooling rack.

Cool, and cut into 10-12 slices. I like it better the next day and toasted. Enjoy.
