AWESOME BBQ! AWESOME BBQ!Number of Servings: 36
Ingredients

6 lb Beef Round (leanest beef)
1 cup cider vinegar
1 cup ketchup
3 tbsp brown sugar
1 tbsp mustard
1 cup molasses (I used sugar free maple syrup)
1 tsp salt
1 tsp pepper
1/2 tsp crushed red pepper flakes
2 tbsp minced garlic
2 tbsp minced ginger
6 slices pineapple
Directions
place 2 slices of pineapple on bottom of crock
place roast on top of pineapple and season with salt and pepper
Mix all other ingredients (except pineapple) and pour on top of beef
Lay last 4 slices of pineapple on top of beef
Cook on high for around 6 hours
Lower temp to low and cook till beef is tender and falling apart (cook times will vary according to crock pot)
(Freezes well for reheating)
