Ingredients

    2 Tbsp olive oil
    2 cups diced carrots
    2 cups diced celery
    2 cups diced potatoes, (I used red skin)
    2 cups diced onions
    2 cups fresh string beans cut into 1 inch strips
    1-15-1/2oz. can yellow sweet corn
    2-32oz organic vegetable broth
    2-14-1/2oz cans diced tomatoes, with basil garlic & oregano
    1 Tbsp dried oregano
    1 Tbsp dried basil
    1 tsp black pepper
    1 tsp sea salt
    4 cups water

Directions

heat oil in soup pot, add celery, carrots & onions and saute until tender about 10 minutes.
Add Diced Tomatoes, vegetable broth, water, basil & oregano cover and bring to boil.
Add potatoes, green beans & corn, reduce heat and let simmer for an additional 50-60 minutes until all vegetables tender.
