    2 lbs butternut squash, peeled and cubed into 1 inch pieces
    2 carrots, peeled and diced
    1 1/2 cups onion, diced
    3 cans (15 oz) chicken broth
    1/2 cup heavy cream


In large pot place squash, onion, carrot and broth. Bring to simmer and cook until squash is fork tender. Remove from heat and ,either using an immersion blender of standing blender, blend til smooth. Return to heat and add cream. Heat just to rewarm and serve.
