    Casserole Ingredients:

    4 sweet potatoes, peeled and cubed
    2 Tbsp light butter
    ½ cup sugar
    2 eggs, lightly beaten
    2 tsp vanilla
    fl½ tsp salt
    ¼ tsp nutmeg, ground
    ¾ tsp cinnamon, ground

    Topping Ingredients:
    ½ cup brown sugar, packed
    1/3 cup flour
    ¼ - 3/4 cup chopped pecans
    1/3 cup light butter


Preheat oven to 350 degrees. Lightly spray a 2 quart baking dish with cooking spray.

Peel, cube, and boil sweet potatoes in water. Drain. Mash sweet potatoes with butter until smooth. Add sugar, lightly beaten eggs, vanilla, salt, nutmeg, and cinnamon; mix thoroughly. Pour into baking dish.

Combine all topping ingredients; mix well with a fork. Sprinkle crumbs on top of sweet potatoes. Bake for 30-40 minutes or until topping is golden brown.
