Introduction

Ingredients

1 Tbsp Olive Oil
13 oz chicken sausage links, sliced
2 cloves garlic, minced
29 oz Cannellini beans, drained and rinsed
32 oz chicken broth
14.5 oz diced tomatoes
1 bunch kale
Salt and pepper
Directions
Heat oil in large saucepan over medium heat.
Add sausage and cook without turning until browned, about 3 minutes. Turn, add garlic and cook for 2 more minutes.
Add some chicken broth and deglaze pan.
Add remaining broth, beans and tomatoes with their liquid.
Bring to simmer and cook over medium high heat. Meanwhile cut out and discard tough stems and center ribs from kale. Tear large leaves into pieces . Add kale to pan and cook, stirring occassionally, until wilted (2-3 minutes). Season with 1/4 tsp each salt and pepper. Serve with bread if desired.
