    Chicken stock, home-prepared, 8 cup
    Petite Cut Diced Tomatoes, 1 cup
    Onions, raw, 2 cup, chopped
    Bell Pepper - Red - 1 large
    Celery, raw, 1 cup, diced
    Carrots, raw, 1 cup, chopped
    Sweet potato, 2 cup, cubes
    Sweet Corn, Fresh, 2 cup
    Poblano Chili 2, diced
    Jalapeno Peppers, .25 cup, sliced
    Dried Oregano, 2 tsp
    Cumin - Ground, 2 tbsp
    Roasting Chicken, light meat, 3 cup, chopped
    Limes, 2 fruit (2" dia)
    Cilantro, raw, 4 tbsp


1. Heat a large heavy bottom stock pot with a little Olive Oil
2. Brown the Onion and Bell Pepper
3. Add the Celery and Garlic to brown.
4. Add the Chicken to brown.
5. Add the rest of the ingredients and simmer for 1 hour.

Serving Size: Makes 12 - 3 Cup Servings
