Ingredients

    2 Tbsp Olive Oil
    2 Tbsp minced Garlic
    1 cup Red Bell Pepper, Chopped
    1 cup chopped Onions, raw
    2 cups Brown Rice, medium grain
    2 15 oz cans S & W Premium Organic Ready-Cut Diced Tomatoes
    1 1/2 15 oz cans S & W Organic Tomato Sauce
    2 whole bay leaves
    2 Tbsp Chili powder
    2 tsp ground cumin
    4 cups Kirkland Organic Chicken Broth
    2 Tbsp Fresh Oregano, chopped
    3 Tbsp Fresh Parsley, chopped
    4 Tbsp Fresh Cilantro, chopped
    Salt and Pepper to taste

Directions

Heat olive oil in dutch oven. Add garlic, bell pepper and onion, saute until tender. Add brown rice and tomato products and stir until combined. Add bay leaves, chili powder, and cumin; stir until combined again. Add broth and bring to boil. Add remaining ingredients and season to taste. Cook until rice is done. Serve with Fajitas or other Mexican dish.
