    1 Tbsp Extra Virgin Olive Oil,
    1/4c Onions, chopped
    2 Granny smith apple peeled & sliced in match sticks
    3 tsp Curry powder
    1/4 tsp Pepper, black
    1 Tbsp Fresh Chives, chopped


In skillet over medium low heat, heat oil. Add onion and cook until translucent, about 5 minutes. Increase heat to medium, add apples, and cook until soft, about 5 minutes. Stir in chives, curry powder, and pepper; reduce heat to low and let cook for 8 minutes more.
