Ingredients

    2 cup Chanterelle Mushrooms, cut into cubes
    2 cups Butternut Squash, cubed
    2 tbsp Olive Oil
    2-4 sprigs Thyme, fresh
    1 sprig Rosemary
    1 tbsp Garlic powder
    Salt
    Black Pepper

Tips

I cooked this in a 300 degree oven for 2 1/2 hours. It came out perfect, but I think it will work for this time as well.


Directions

In a oven safe dish, combine all ingredients. Bake 350 for 60 minutes or until squash is soft and carmelized and mushrooms are carmelized. Serve warm with favorite roasted meat.
