Blueberry muffins made with coconut flour, coconut oil and coconut milk Blueberry muffins made with coconut flour, coconut oil and coconut milk
Number of Servings: 18

Ingredients

    Coconut flour, 1/2 cup
    Coconut Oil, 4 tbsp
    Coconut Milk, 6 tbsp
    Eggs, fresh, 5 medium
    Vanilla Essence 1/2tsp
    Baking Powder, 1/2 tsp
    Salt, 1/2 tsp
    Xylitol, 5 tbsp
    Blueberries, frozen (unsweetened), 100 grams
    1 scoop whey protein isolate

Directions

Mix dry ingredients separately. Sieve
Put wet ingredients in blender and blend.
Add dry to wet ingredients.
Blend again.
Put in bun cases.
Put in over at 180 Celcuis for 18 minutes or until browned on top. Keep checking near the end as they can turn too brown fast.

Serving Size: makes 18 small buns
