Number of Servings: 5

2 boneless pork loin chops, diced small
    1/2 cup onions, diced
    1 stalk celery, diced
    1 clove garlic, minced
    1 tbsp olive oil
    2 tbsp fresh chives chopped
    1 large egg
    1 tblsp sugar
    2 tblsp soy sauce
    4 cups cooked rice

You can leave out the sugar to save a few calories and switch to brown rice

Heat oil on medium heat in nonstick skillet. Add garlic and choped pork. Cook 5-8 min until pork is cooked. Add onion, celery and cook 2-3 min longer. Add egg and stir until egg cooked (1 min) and blended into meat mixture. Then add cooked rice, sugar and soy sauce. Stir and cook until all ingredients mixed well. Pepper to taste. YUM!
