    1 cup Quinoa,
    1 cup water
    Apple juice, unsweetened, 1 cup
    Cinnamon, ground, .5 tsp
    ground nutmet .5 tsp
    Celery, raw, 1 cup, diced
    Walnuts, .5 cup, chopped
    Cranberries, dried, sweetened (craisins),


Can mix in 1 cup yogurt for a creamy salad. Or sprinkle on a bed of lettuce.


Cook quinoa in the 1 cup water and apple juice and cinnamon and nutmet.
Cool quinoa thoroughly in refrigerator
Add celery, walnuts, and cranberries and mix well.

Serving Size: Makes 8 1/2 cup servings.
