    1 tsp salt
    4 cups potato
    4 tsps fresh garlic (1/2 a head of garlic)
    1 cup frozen spinach
    15 slices bacon
    1 cup grated cheddar cheese


Can be prepared in advance and refrigerated until ready to bake. Throw chopped tomatoes on before the cheese for a change.


Boil potatoes and garlic in salted water. Boil spinach. Fry bacon to crisp. Drain potatoes. Put potatoes and garlic in blender, puree. Spread into 9x13 casserole dish. Spread spinach on top. Crumble bacon on top. Spread cheese on top. Cover with tin foil. Bake at 450 degrees for 30 min, remove foil, bake 10 min. or until cheese is melted.
