    3 lbs. Sweet potato (about 5 medium)
    1/3 cup Honey
    1 Large Egg
    1/2 tsp. Ground Cinnamon
    1/4 tsp. Ground Nutmeg
    1/2 tsp. salt

    1 Large Egg White
    1/4 tsp. Cream of Tartar
    1/4 Cup Powdered Sugar


Peel and cube sweet potatoes, boil until tender, drain, let cool slightly. While sweet potatoes are boiling, whip one egg white, with Cream of Tartar and powdered sugar. In mixing bowl, mix sweet potatoes, honey, cinnamon, nutmeg, salt. Pour into baking pan greased with cooking spray. Top with meringue topping. bade at 350 for about 40-45 minutes.
