Ingredients

    2 cups flour
    3/4 tsp cinnamon
    1/4 tsp nutmeg
    1/2 tsp baking powder
    3/4 tsp baking soda
    1/2 cup canola oil
    3/4 cup sugar
    1/2 cup water
    1 cup pumpkin puree (Libby's preferred)
    1/2 to 3/4 cup craisins (as desired)
    1/2 to 3/4 cup walnuts (as desired)




    Stir together oil, water, pumpkin, sugar and vanilla. In another bowl, mix together flour, baking powder, baking soda, salt, spices, craisins and nuts (if desired.) Fold flour mixture into pumpkin mixture just until blended.

    Pour into loaf pan or makes 12 muffins.

Tips

You can save about 60 calories per serving by leaving out the craisins and walnuts.


Directions

350 oven - 60 minutes or until toothpick comes out clean.
