Ingredients

    2 tbsp xtra virgin olive oil
    1 can pigeon peas, drained
    1 cup cooked black eyed peas
    1 piece country style pork rib
    1/2 c sofrito
    2 green onions/scallions
    2 tbsp tomato paste
    2 cups homade chicken stock
    2 tbsp olives w/ pimentos
    1 tbsp capers
    1 bay leaf
    cumin, seasonings to taste

Directions

heat olive oil on medium heat. brown rib on all sides then remove. saute sofrito, tomato paste, olives, capers, roasted red peppers,seasonings, scallions and bay leaf until water is evaporated. cut pork into chunks and add to mixture with peas. add chicken stock then bring to boil. simmer for 1 hour.
serves approximately 4
