Number of Servings: 6


    4 large leeks, cleaned and sliced thinly
    2 medium potatoes diced
    1 medium onion, chopped small
    1.5 pints light chicken stock
    .5 pint skimmed milk
    2 tbsp olive oil
    2 tbsp fresh snipped chives
    black pepper to taste


In a large thick bases saucepan heat the oil then add the potatoes, leeks and onion, stirring well to coat.
Season with pepper
Cover and allow veg to sweat over a low heat for 15 mins.
Add the stock and milk, heat to simmering, cover and simmer for 20 mins or until the veg is soft. Take care not to overheat or the milk may cause it to boil over.
Blend, check seasoning and garnish with chopped chives.
