Number of Servings: 6

Ingredients

    25g butter
    1 tbsp olive oil
    2 medium onions, chopped
    600g parsnips cut into 2 cm pieces
    2 garlic cloves, crushed
    600g Bramley (cooking) apples, peeled, cored and cut into chunks
    1 litre veg or chicken stock (3 oxo cubes)
    150ml skimmed milk
    black pepper


Directions

melt the butter and oil in a large pan
Gently fry the onions and parsnips for 15 mins or until onions are soft
Stir in the curry powder and mix to coat the veg
Add the garlic and the apples and cook for another 2 mins stirring
Pour over the stock and bring to the boil.
Reduce the heat and simmer for about 20 mins or until the parsnips are soft.
Remove from the heat and season to taste before blending.
Stir in the milk adding more if required.
