Ingredients

    1 cup, Carrots, diced
    2 medium onions, diced
    1 cup diced Parsnips
    1 cup Peas, frozen
    2 cups diced Potato, raw
    1 cup Lentils
    1cup Sweetcorn (Tinned) - Asda (Smartprice)
    1 cup Organic edimame & mung bean fettucine
    3 Vegetable stock cube, Knorr
    water for stock

Directions

Make up stock cubes as directed. Put all the ingredients in a pan, bring to the boil, then simmer for about 1 hour. Alternatively, put in a slowcooker and cook on low overnight.
