    cheddar cheese- 2 cups
    sour cream-16 ozs
    diced mild green chiles-4 oz can
    cooked shredded turkey breast- 2 cups
    diced onion- 1/2 cup
    white corn tortillas 24 6 inch tortillas
    cream of chicken soup- 2 10oz cans


can use fat free soup, sour cream and a combination of cheeses like monterey jack or pepper jack


combine all ingredients except tortillas in a large bowl- wrap tortillas in paper towel and warm in microwave until soft- add 1 heaping TBSP of filling to each tortilla and place in 13x9 inch pan- (makes 2 pans) to remaining filling thin with water, milk or chicken broth until soupy- pour over enchiladas sprinkle more shredded cheese on top - bake at 350 for 35 minutes until cheese is bubbling and tortillas are soft
