    3 cups fresh spinach (could use frozen about 10oz)
    4 large artichoke hearts (bottled unseasoned)
    3/4 tsp dried minced garlic (or 3 medium cloves)
    4 oz cream cheese
    2 Tbsp milk
    1/4 cup Parmesan cheese

    One box (13.75oz) whole wheat spiral pasta


Hint: If you don't want the artichoke flavor to be as strong, squeeze out the juice before chopping.


Soak spinach in warm water for 10 min. Start preparing pasta. Chop spinach, artichoke hearts, and garlic in food processor so it looks like pesto. Then mix cream cheese, Parmesan, and milk until smooth. Combine pesto mixture with cream cheese mixture. Stir sauce with cooked whole wheat spiral pasta. Serve warm.

Serving Size: makes about 6 1-cup servings
