Introduction

Ingredients

    1 large Egg
    .25 cup (handful) of chopped frozen spinach
    .333 cup of shredded cheese (handful)
    1 flour tortilla
    2 slices of turkey bacon
    1 tsp margarine (optional)

Tips

If you want to cut 33 calories do not use margarine to grease pan or use less than I do. Turkey bacon cooks extremely fast! However crispy you want you bacon determines how long it will take in microwave. Though the spinach is frozen it cooks really fast!


Directions

Heat small skillet, add desired butter/margarine (1 tsp), Whisk egg in a bowl, pour into skillet tilt pan so bottom is covered with egg. Put 2 slices of turkey bacon in microwave for 2 minutes. Sprinkle spinach onto of egg in skillet, sprinkle cheese onto of spinach. Egg should be thick and cooked, use spatula to left one side of egg to the other closing it making an omelet. Press down to make sure closed.

Take bacon out of microwave (should be cooked), get 1 flour tortilla, using spatula lift omelet out of skillet, place flour tortilla in skillet and place omelet on top on one side of tortilla. Place bacon on top of omelet. After 1 minute tortilla should lift or rise (bubbles) that means bottom is brown. Lift side of tortilla with no omelet in it and close it to meet the other side. Remove from skillet and allow to cool! Ready to eat!
