Introduction

There is just no way to make these low fat and still keep the hush puppy. I used egg whites, water to reduce some fat and calories from whole eggs and milk.
I averaged about 1/4 cup oil retention from frying these in a deep fryer. Original recipe was 18 grams of fat per 3 hushpuppies. These are five hushpuppies for 9 grams of fat.

Ingredients

    2 cups tenda bake self rising corn meal
    1 small onion, chopped
    1/2 cup splenda
    1 cup water
    1/4 cup canola oil
    2 egg whites

Tips

Nutritional value is only for ingredients listed, not adding the extra salt. I did not use extra salt.


Directions

Preheat oil in a deep pan or use a deep fryer according to manufacturer's directions.

Mix all ingredients together until well combined. Batter will be really thick. Using a walnut sized cookie scoop, scoop batter and carefully add to hot oil. Only add about 5 hushpuppies to oil, so as to not brin temperture down too much. Cook about 3-4 minutes until desired browness. Sprinkle with salt if desired after cooked.

This will make 31 golf ball size hushpuppies.

Serving Size: Makes 6--5 hush puppy servings.
