    5 lbs. potatoes, diced to 1 to 2 inch chunks
    6 cups water
    1 medium onion, diced
    6 boulion cubes
    1 tsp. seasoning salt
    1/2 tsp. black pepper
    1/2 tsp. red pepper
    4 cloves garlic, minced
    16 oz Neufchatel Cheese,
    1 lb. bacon, cooked, grease removed, and crumbled
    10 TB chopped chives or green onions
    2 C. Cheddar Cheese, shredded


Can also be cooked on low in crock pot for 8 hours, final phase with Neufchatel cheese does need to be on high.


Place onion, potatoes, boulion, and seasoning in crock pot on high. Pour in water. Cook for 4 hours or until potatoes are fork tender. For smooth soup mash with potato masher, for chunky soup do not. Crumble both packages Neufchatel cheese into crock pot, replace lid, and cook an additional 30 minutes on high, stirring occasionally during the 30 minutes. Top with cheese, bacon, and green onions or chives.
