Ingredients

    ½ cup butter or margarine (use ¼ cup for lower-fat version)
    2 cups chopped onion
    1 1/3 cup chopped celery
    ¾ cup chopped green onion
    ½ cup chopped green pepper
    ¼ cup chopped parsley
    4 cups diced cooked turkey
    ¾ cup dry sherry
    2 teaspoons bottled hot sauce (like Tabasco)
    1 teaspoon sugar
    1 teaspoon salt
    1 teaspoon black pepper
    ¼ to 1 teaspoon cayenne pepper (depending on your taste)
    4 cloves garlic, crushed

Directions

Melt butter in medium skillet. Sauté onion, celery, green onion, green pepper, parsley, and garlic until tender. Add remaining ingredients, stirring well. Cover and simmer 10 minutes. Serve over rice.
