    1 c. flour
    1 Tbls. sugar
    1 tsp. baking powder
    1/4 tsp baking soda
    1/4 tsp salt
    1 egg, beaten
    1 c. buttermilk
    2 Tbsp. oil
    1 tsp. maple extract
    1/2 c. pecans, chopped
    1/2 frozen or fresh blueberries (optional)


Mix dry ingredients, set aside. Mix wet ingredients, then add to dry and mix just until combined. Add pecans and berries, mix till stirred in.
Pour about 1/4 cup of batter for each pancake into warm, greased griddle.

Serving Size: makes 8 3-inch pancakes
