Ingredients

    1 butternut squash, peeled and cubed
    2 tbs. butter
    1 tbs. olive oil
    3 cups diced onion
    2 garlic cloves, smashed and diced
    1/2 tsp. course salt
    1/2 tsp. ground black pepper
    1 tsp. curry powder or garam masala
    3 cups chicken or veggie broth


Directions

Melt butter and olive oil, cook onion and garlic for about 10 minutes or until translucent. Add the spices (salt, pepper and curry) to the mixture and cook for 5 minutes more. Then add the cubed butternut squash, cook for 10 minutes. Add chicken or vegetable broth and cook for 20-25 minutes, or until the squash is fork tender. Blend in batches (or with immersion blender) until smooth.
