Introduction

This is a good way to use leftover rice. You can use any light dressing you like. This is a good way to use leftover rice. You can use any light dressing you like.
Number of Servings: 2

Ingredients

    1 1/3 cups brown jasmine rice, cooked
    1 cup cucumber, peeled and sliced
    4 cups salad mix
    6 baby carrots, grated (what I had on hand), could use 2 carrots, grated
    1/2 cup Bernstein's light fantastic cheese fantastico salad dressing

Directions

Place salad mix and rice in salad bowl. Peel and slice cucumber, grate carrots, add to bowl. Drizzle salad dressing over top. Toss well to combine. Makes 2 servings. Delicious!
