Introduction

Ingredients

    10 to 12 cups of homemade turkey stock
    1 large onion chopped
    2 peeled carrots sliced
    2 cloves of chopped garlic
    1 Tbs of extra virgin olive oil
    6 Tbs of flour
    1/2 tsp salt
    Pepper to taste
    2 cups leftover stuffing
    2 sprigs of thyme
    2 cups of shredded leftover turkey
    1 cup corn kernels

Directions

Put olive oil in a stockpot and heat over medium high heat. Add chopped onions and garlic and cook until soft and translucent, about ten minutes, Add the carrots, celery, thyme stock, and broth and bring to a simmer. Cook until vegetables are just soft, about ten minutes. While the stock is simmering whisk the eggs, flour, salt and some pepper together until smooth. Add the stuffing and mix until well combined; cover and reserve. When broth has finished simmering roll level tablespoons of the dumpling mixture into balls with wet hands and drop into simmering soup. Cook until dumpling float, about three or four minutes. Gently stir in the turkey and corn, season to taste, and simmer until heated through. Serve immediately.

Moistness of stuffing can vary; if the dumpling dough is too soft to roll, add flour a teaspoon at a time until it is firm enough to hold its shape while rolling.
