Ingredients

    1 Tbsp olive oil
    1 tsp minced garlic
    .5 cup diced tomatoes (do not drain)
    .5 cup garbonzo beans
    .5 cup cooked frozen spinach
    4 oz. cooked linguine
    1 Tbsp grated parmesan cheese

Directions

1. Cook spinach
2. In a separate pan start boiling water for linguine and get linguine cooked while you continue.
3. In a separate pan saute garlic, olive oil for a minute or so.
4. Add tomatoes and beans.
5. Add spinach, reduce heat to low and simmer about 5 minutes. Stir occasionally.
6. Spoon tomato/beans/spinach mixture over linguine and sprinkle with cheese.

Serving Size: I put it so it's one serving
