    Holiday Nog Cupcakes

    1/4 c flour (I haven't tried GF yet)

    1/4 c vegan nog (I used Silk Soy Nog - a holiday favorite!)

    3 pks stevia (or about 1 TBSP sugar)

    2 TBSP pumpkin puree

    1/4 - 1/2 tsp baking powder (the pumpkin is kind of heavy)

    1/2 tsp vanilla

    dash salt


Enjoy this VEGAN, OIL-FREE, WHOLE-GRAIN cupcake any time of the day. Try "frosting" with Pumpkin Maple syrup (2 TBSP pumpkin puree + 1 tsp maple syrup).


Mix dry. Add wet. Microwave about 90 minutes on high.

Serving Size: 1 giant cupcake or 2 nice sized cupcakes

  • Microwave for 90 minutes? Also how is this a whole grain recipe, is that flour supposed to be whole wheat flour? This sounds like a great idea and I look forward to trying it, but you need to fix a few details here I think. - 11/14/12
