Introduction

This is a vegetarian dressing or stuffing made with dried crandberries, rice and almonds. This is a vegetarian dressing or stuffing made with dried crandberries, rice and almonds.

Ingredients

    3 cups cooked brown rice
    1/3 cup of dried cranberries
    1/3 cup of slivered blanched almonds
    2 cups chopped onions
    2 medium stalks of celery chopped
    1 tablespoon of olive oil
    These seasonings to taste: Rosemary, Sage, Oregano and savory. Salt can be added but not included here.
    I don't add salt during cooking leaving it to the individual to add if they want.

Tips

You may wish to cook this longer depending on your oven and depending on how soft you want the celery.


Directions

Saute chopped onions in 1 tablespoon olive oil.
Put 3 cups cooked onions in large bowl add onions, raw chopped celery, cranberries, almonds and seasonings to taste. Stir this until thoroughly mixed and put in a baking dish and bake at 350 degrees for 30 minutes.

Serving Size: makes 12 1/2-cup servings
