Introduction

I added the "regular" version a little bit ago and as I got to thinking about it, I realized I could make it lower fat with a few changes. Number of Servings: 5

Ingredients

    3 large eggs, fried
    3 egg whites, fried
    5 baked potates
    1 cup of diced ham
    1/4 cup of melted cheddar cheese

Directions

1.) Bake the potatoes in the microwave.
2.) Scramble and fry the egg whites.
3.) Peel skin from the baked potatoes, and mash with a fork.
4.) Add the potatoes and ham to the eggs.
5.) Pour the melted cheese over the mixture.

Serving Size: 5 - 1 cup servings
