Introduction

Number of Servings: 10

Ingredients

    3 Skinless Chicken Breast, chopped
    1 large bag of Kale, chopped
    5 stalks of celery, chopped
    4 Carrots, chopped
    1 large yellow onion, chopped
    2 small cans of tomato sauce
    2 cans of lima beams
    1 Large can (6 cups) of low sodium/FF chicken broth
    Olive oil to coat the bottom of the stock pot

Tips

This recipe is very flexible and can be modified in many ways. Next time, I may add diced tomatoes instead of tomato sauce next time. I also plan on putting it over some brown rice or couscous.


Directions

Put olive oil in the stock pot and cook your celery, carrots, and onion until slightly tender. Add the bag of Kale until it has cooked down. Add 2 cans of Lima Beans (with liquid) and 2 cans of tomato sauce. Add in the chicken and then let it simmer.

Serving Size: Makes 10 bowls of soup
