Introduction

Egg + Whites + Mush + Spinach Egg + Whites + Mush + Spinach
Number of Servings: 1

Ingredients

    2 med mushrooms, I used Baby Bella, sliced thin
    1/3 c baby spinach
    1 egg
    3 egg whites or 1/4 cup cartoned egg whites
    Pam
    salt & pepper

Tips

You could add a little fat-free cheddar if you wanted to. 8)


Directions

- Heat omelette pan or small skillet over med heat
- Spray a little Pam
- Cook mushrooms until they start to brown, about 2 minutes
- Add spinach and stir until wilted, about 1 minute
- Add egg and egg whites, break yolk
- Cook until egg is just set, then flip over and cook another minute.

Done


Serving Size: Makes 1 med-sized omelette
